This morning I was standing at my kitchen counter looking at all the peaches my hubby picked from our tree, and I thought what can I do with some of these peaches?
So I scoured my pantry and found an organic box of tabouli, and a quick, nutritious salad was made in a flash! This is such an easy way to use some local fresh peaches this time of year.
Bulgur is a wonderfully versatile grain. Combine it with veggies you have on hand, some spices and you have a healthy dish. This ancient grain from the middle east is made from precooked wheatberries.
Tabouli with Fresh Peaches
1 cup bulgur, cooked or 1 box of Tabouli Salad
1 peach, chopped
2 Tbsp red onion
1 bunch of fresh parsley, cilantro and/or basil, chopped
2 Tbsp olive oil
Juice of 1 lemon
Combine ingredients and refrigerate for a couple of hours.
Optional: a sprinkle of some pine nuts
Another favorite way to use the bulgur grain is to add it to your soups. It helps to thicken the soup and adds a little chewy texture. It’s also a great substitute for rice because it has more fiber and nutrients and is also a low glycemic food.
