Pear and Spinach Salad

This is a simple and beautiful salad to serve on its own or add to a brunch menu.  It is a seasonal salad as you must have ripe, juicy pears to make it delectable.  I look for greenish to yellow pears or Anjou that are firm and will ripen within a few days.  You can always speed up the ripening by putting the pears in a paper brown bag – make sure to check them daily so you use them when they are ready.  

Spinach-Pear Salad

Pear & Spinach Salad:
1 bunch of fresh spinach
1 juicy ripe pear
1 stalk celery, sliced
a handful of pecans
1 Tbsp of red onion, chopped

Make a simple dressing:

2 Tbsp of apple cider vinegar
1 Tsp of Dijon mustard
Splash of balsamic vinegar
Drizzle over salad ingredients and serve.

Optional: Add a handful of fresh blueberries or raspberries for color as they pair well with the pears.  You could also sprinkle Grahm Marsala on the pears for a little umami flavoring.
